The Sourdough Crunch
The Nicer Slicer has some interesting uses and I often discover them by accident. Here’s one I want to call "The Sourdough Crunch."
Thanks to Dr. Joel Kahn’s great book “The Plant-Based Solution”, there is a recipe I occasionally prepare called The Tofu Scramble. Here is the recipe:
Ingredients:
1 block tofu, pressed between two plates to drain the water
1 TBS tamari
1 TBS nutritional yeast
1-2 garlic gloves, minced
½ TBS turmeric
½ TBS black pepper
¼ TBS ground cumin
Chopped veggies: red pepper, onion, mushrooms, spinach, or any other you have left in the fridge.
Instructions:
1. Crumble the tofu with your hands or mash it with a fork in a bowl.
2. Add all the other ingredients and mix together well.
3. Transfer the tofu mixture to a skillet and cook over medium heat.
4. Stir and cook until the liquid evaporates.
This is a tasty dish, but the other day I wanted something crunchy to go along with it. I toasted a piece of sourdough and sliced it in the Nicer Slicer. The I added a little bit of butter to each slice and put them into my air fryer on the bake setting at 300 degrees for 5-6 minutes. I ended up with some lovely crunchy toast bits, perfect for a little bit of jam and a great compliment to the tofu scramble. Yum!
